Ojingeo bokkeum (오징어 볶음) is Korean stir-fried squid: hot, punchy and tossed with vegetables. At Han Kitchen in Zurich-Oerlikon we serve it with seasonal vegetables in a spicy, savoury sauce for CHF 31.00 – in the restaurant on Baumackerstrasse 46 or as takeaway.
What is ojingeo bokkeum?
“Ojingeo” is Korean for squid and “bokkeum” means a stir-fried dish. The squid is cooked quickly over high heat so it stays tender, then tossed with vegetables in a red, spicy sauce.
In Korea it is an everyday favourite, typically eaten with a bowl of rice. The heat traditionally comes from gochujang, a fermented chilli paste, and gochugaru, Korean chilli flakes.
Our version with seasonal vegetables
We pair the squid with seasonal vegetables – whatever is fresh goes into the pan, so the dish changes a little through the year. The spicy, savoury sauce brings everything together and gives ojingeo bokkeum its signature character.
Who is it for?
Ojingeo bokkeum is for seafood lovers who enjoy a bit of heat. It is marked as spicy on our menu and is the only squid dish in our Korean section. Prefer fish? Try the Han Kitchen Special with stir-fried kimchi and salmon. Prefer meat? Kimchi Jeyuk Bokkeum with pork belly is the natural alternative.
