California roll

Also: California Maki

The California roll is an inside-out sushi roll (uramaki) with the rice on the outside. It is classically filled with avocado, crab meat or surimi and cucumber, and coated with sesame seeds or fish roe. It was created in North America and contains no raw fish, which is why it is known worldwide as the starter sushi.

Where does the California roll come from?

Several chefs claim to have invented it. A sushi restaurant in Los Angeles in the 1960s is often credited: avocado stood in for fatty tuna, which was hard to get in winter, its creamy texture loosely recalling toro. A Japanese chef in Vancouver, on the other hand, says he created the roll in the 1970s for Canadian guests who were wary of raw fish and visible nori.

What is certain is that the California roll was born in the North American sushi scene. It made inside-out rolls popular and paved the way for sushi in many countries – Europe included.

The classic ingredients

The basic recipe is simple: avocado for creaminess, crab meat or surimi (imitation crab made from fish paste) for a sweet, mild flavour, and cucumber for freshness and crunch. The outer rice is coated with sesame or tobiko, the tiny orange roe of the flying fish. Some versions also add mayonnaise.

Many restaurants interpret the California roll freely: real crab instead of surimi, prawns or crayfish, with or without cucumber. The idea stays the same – a mild, creamy inside-out roll without raw fish.

Who is the California roll for?

For anyone trying sushi for the first time, for children and teenagers, for guests who prefer to avoid raw fish and for anyone simply after something mild and creamy. If you are pregnant, it is still worth checking the ingredients such as crab, roe and seafood, and asking if in doubt.
