Salmon teriyaki is salmon finished with a glossy, sweet-and-savoury teriyaki glaze in the Japanese style. At Han Kitchen in Zurich-Oerlikon it is on our Japanese menu for CHF 31.00 – to eat in or take away.
What does teriyaki mean?
Teriyaki is not an ingredient but a Japanese cooking method. The word combines «teri», meaning shine, and «yaki», meaning grilled or pan-fried. A piece of fish or meat is glazed during cooking with a sauce based on soy sauce, mirin and a little sugar. The sauce reduces and coats the fish in a glossy, lightly caramelised layer.
Salmon is ideal for teriyaki: its natural oils keep it moist, and its flavour stands up well to the rich, sweet-savoury glaze.
Salmon teriyaki at Han Kitchen
Our salmon teriyaki sits on the Japanese menu alongside salmon donburi, zukedon and yagi udon. If you do not like heat, this is a good pick: teriyaki is naturally mild and well rounded. Our food is cooked by a former chef of Globus Bellevue in Zurich.
Fancy a rice bowl instead? Try the salmon donburi with salmon, avocado and a fried egg for CHF 28.00.
Salmon teriyaki to take away
Salmon teriyaki is also available to take away, though without delivery: call us on 077 268 20 80 or order on the spot at Baumackerstrasse 46 in Zurich-Oerlikon. Our hours: Tuesday to Friday 11:30–14:00 and 17:00–22:00, Saturday 17:00–22:00 and Sunday 13:00–21:00; closed on Mondays.
