In short

Han Kitchen in Zurich-Oerlikon serves salmon tartare for CHF 18.00: raw Norwegian salmon, finely chopped and prepared Japanese style. Enjoy it in the restaurant at Baumackerstrasse 46 or call ahead and collect it as takeaway.

Japanese-style salmon tartare

Say «tartare» and most people picture the classic beef version. Japanese-inspired cooking uses raw fish instead – and salmon is ideal: tender, rich and gently mild. Where sashimi puts whole slices on the plate, tartare chops the fish finely and seasons it.

On our menu, salmon tartare sits in the «Sashimi & Tartare» section next to tuna tartare. Same idea, different fish: salmon is milder and silkier, tuna bolder and firmer. Can’t decide? Order both and share.

Salmon from Norway

With a raw dish, the fish is everything. According to our menu, our salmon comes from Norway – the same salmon we use for sashimi, carpaccio and our sushi rolls. Our food is cooked by a former chef of Globus Bellevue in Zurich.

Because the tartare is served raw, it is not for everyone. If you would rather avoid raw fish, the menu has cooked salmon dishes too, such as salmon teriyaki (CHF 31.00) or the Han Kitchen Special with stir-fried salmon and kimchi (CHF 35.90).

Starter or light main

At CHF 18.00, the salmon tartare is a proper small dish. At lunchtime (Tuesday to Friday, 11:30 to 14:00) it makes a light meal with a miso soup (CHF 6.00) or a seaweed salad (CHF 7.00). In the evening it works as a starter to share before a Korean main such as bibimbap or beef bulgogi.

Comparing our salmon options? Salmon sashimi (4 pieces) is CHF 13.00, salmon tataki (6 pieces) CHF 19.00 and salmon carpaccio CHF 24.90 – so it is easy to pick the one that suits your appetite.
