In short

The Han Kitchen Special (연어 김치 볶음) is our house dish: stir-fried kimchi with fresh salmon, described on the menu as a “kimchi glazed salmon stir-fry”. It costs CHF 35.90 and, under this name, you will only find it at Han Kitchen on Baumackerstrasse 46 in Zurich-Oerlikon – to eat in or take away.

What is the Han Kitchen Special?

The Korean name spells out the ingredients: “yeoneo” means salmon, kimchi is the fermented vegetable and “bokkeum” means stir-fried. In other words, a pan-fried dish of kimchi and salmon. As with kimchi jeyuk bokkeum, the kimchi is fried first – but here fresh salmon takes the place of pork belly.

As it cooks, the kimchi mellows and its seasoning clings to the fish like a glaze – hence “kimchi glazed”. The dish is marked as spicy on our menu.

Why kimchi and salmon?

Our kitchen is where Korea meets Japan. Our guests know salmon mainly from sashimi, tartare and sushi, and kimchi from the Korean dishes. The Han Kitchen Special brings both sides of the menu together in one pan: the bold, tangy heat of the kimchi and the mild, succulent salmon that softens it.

Our food is cooked by a former chef of Globus Bellevue in Zurich. The Special is the dish that carries the name of our restaurant.

What goes with the Han Kitchen Special?

The special is a full main course for one. As it is spicy, a mild companion works well: japchae glass noodles (CHF 28.90) or so bulgogi (CHF 36.90) to share, or a light starter such as miso shiro (CHF 6.00), edamame (CHF 7.00) or the Japanese-style green salad (CHF 8.50).

If you prefer your salmon raw, you will find it on the same menu as salmon sashimi (4 pieces, CHF 13.00), salmon tartare (CHF 18.00) or salmon tataki (6 pieces, CHF 19.00). That way you can compare both styles at one table: pan-fried salmon with a kimchi glaze and pure fish from the Japanese side of the kitchen.
