Salmon Nigiri is the most popular nigiri on our menu: a slice of Norwegian salmon on hand-shaped sushi rice, 2 pieces for CHF 9.00. Find it at Han Kitchen, Baumackerstrasse 46 in Zurich Oerlikon – to eat in or to take away.
Nigiri: rice and fish at their simplest
Nigiri is sushi in its most original form. A small mound of sushi rice is shaped by hand and topped with a slice of fish – no nori on the outside, no extra filling. In our Salmon Nigiri that topping is raw salmon, which according to our menu comes from Norway. It is tender, slightly buttery and almost melts in the mouth.
With so little going on, every ingredient matters: the fish, of course, but also the rice, which is loosely pressed and lightly seasoned. Traditionally, nigiri is eaten in one bite, and if you dip it in soy sauce at all, you dip the fish side briefly – never the rice.
Our nigiri at a glance
There are five nigiri on our menu, each served as 2 pieces: Salmon Nigiri (CHF 9.00), Maguro Nigiri with tuna (CHF 10.00), Ebi Nigiri with prawn (CHF 9.00), Unagi Nigiri with eel (CHF 9.00) and the vegetarian Inari Nigiri (CHF 8.00). So nigiri at Han Kitchen start at CHF 8.00.
For a first taste, we suggest salmon and maguro side by side: one mild and buttery, the other bold and meaty. If you prefer your salmon rolled, try the Salmon Maki (CHF 10.00 for 6 pieces); if you want it pure, go for the Salmon Sashimi (CHF 13.00 for 4 pieces).
