Kimchi Jeyuk Bokkeum at Han Kitchen in Zurich-Oerlikon
In short

Kimchi jeyuk bokkeum (김치 제육 볶음) brings together two Korean classics: kimchi and marinated pork belly, stir-fried in the same pan. At Han Kitchen in Zurich-Oerlikon we serve it with vegetables and tofu for CHF 32.90 – in the restaurant on Baumackerstrasse 46 or as takeaway.

What is kimchi jeyuk bokkeum?

“Jeyuk” is Korean for pork and “bokkeum” means stir-fried. Add kimchi and you get one of the most popular pairings in everyday Korean cooking: the richness of the pork belly softens the kimchi’s acidity, while the kimchi brings freshness and punch to the meat.

As it fries, the kimchi caramelises slightly and loses some of its sourness, leaving a deep, savoury flavour. In Korea, jeyuk bokkeum is also known as dwaeji bulgogi – pork bulgogi.

Our version with vegetables and tofu

We stir-fry kimchi with marinated pork belly and vegetables and serve it with tofu. The pork comes from Switzerland. The mild tofu is a calm counterpoint to the bold kimchi and soaks up the sauce beautifully.

Kimchi jeyuk bokkeum is marked as spicy on our menu. The heat is noticeable, but the pork belly and tofu keep it in balance.

Who is it for?

This is the dish for anyone who likes Korean food bold and savoury. If you are trying kimchi for the first time, it is a good way in: cooked kimchi is rounder and less sour than raw. Prefer your kimchi as a stew? Order kimchi jjigae. Prefer fish? Go for the Han Kitchen Special with salmon.

What goes with kimchi jeyuk bokkeum?

Because the dish is bold and spicy, something mild on the table balances it nicely. If there are two of you, pair kimchi jeyuk bokkeum with japchae (CHF 28.90) or so bulgogi (CHF 36.90) – neither is marked as spicy on the menu. For a fresh start, try the Japanese-style green salad (CHF 8.50) or edamame (CHF 7.00). Trying Korean food for the first time? Order it alongside a bowl of bibimbap (CHF 32.90) and taste both the fiery and the gentle side of Korean cooking.
